Ingredients 
- 2 cups canned chickpeas (garbanzo beans)  
 - 1 cup vegetarian mayonnaise (can use Vegenaise)
 - 2 Tablespoons mustard 
 - 3 Tablespoons sweet relish
 - 2 green onions, chopped (optional)
 - ¼ teaspoon salt
 - ¼ teaspoon black pepper
 
 
 
 
Directions: 
- Put chickpeas in a ziplock bag, use a rolling pin to mash chickpeas.
 - Pour mashed chickpeas into a bowl. Add remaining ingredients, and mix together for 1 minute.
 - Serve as a sandwich or with corn chips or raw vegetables. 
 
 
This is a very simple and delicious American egg salad recipe - without egg!  Enjoy it on bread with lettuce and tomato for a healthy, tasty lunch. 
Chickpeas (also called garbanzo beans) provide fiber, protein and such minerals as potassium, magnesium and zinc.
